A landscape that tastes like history

When you arrive at the south of Ibiza and see the salt ponds for the first time, you understand why this place has been so important for millennia. The enormous evaporation pools stretch as far as the eye can see, changing colour depending on the time of year.

Brilliant white in summer, when the salt crystallises. Pink and violet in autumn thanks to the algae and microorganisms that inhabit them. It is a unique landscape, declared a Natural Park, that produces one of the most prized culinary treasures of the Balearic Islands.

Over two thousand five hundred years of salt production

The Phoenicians were the first to exploit Ibiza's salt ponds, back in the seventh century BC. For them, salt was as valuable as gold: it allowed them to preserve food during long journeys across the Mediterranean.

The Carthaginians and later the Romans continued the exploitation, and during the Middle Ages Ibiza salt was one of the main export products of the Pitiusas.

In fact, salt was for centuries the main source of wealth for Ibiza. The salt trade financed the construction of the walls of Dalt Vila and sustained the island's economy during times when agriculture and fishing barely provided enough to survive.

Each Ibicencan family had the right to a certain amount of salt each year, a privilege that was passed down from generation to generation. That tradition reflects the vital importance this resource had for survival on the island.

The artisanal production process

Salt production in Ibiza follows an artisanal process that has barely changed in centuries. Seawater is pumped into the evaporation pools, where the sun and wind do their work during the summer months.

Flor de sal: the most prized product

The flor de sal (salt flower) is hand-harvested from the surface of the pools in the early morning hours, when the crystals are finest and most delicate. It is meticulous work that requires experience: you must know how to identify the exact moment when the crystals are ready.

This Ibiza flor de sal has a crunchy texture and a clean flavour, with mineral notes and a slight iodine touch that reflects the purity of Mediterranean waters.

Coarse salt: the visual icon of the south

Coarse salt is harvested from the bottom of the pools at the end of summer, when all the water has evaporated. It is piled up in the drying areas, forming those white mountains that are one of the visual icons of southern Ibiza. It is more intense and is used mainly for cooking, salting meats and fish.

A gourmet product of worldwide renown

In recent decades, Ibiza salt has made the leap to the international gourmet world. The Sal de Ibiza brand, with its iconic tin featuring an image of the salt ponds, has become a benchmark for quality in professional kitchens and homes around the world.
