Breakfast as a sacred ritual
In Ibiza, breakfast is not just the first meal of the day: it's a social ritual that sets the rhythm of the morning. We Ibizans love heading to a bar for breakfast, sitting at the counter or on the terrace with our coffee and newspaper, greeting our neighbors and starting the day at a leisurely pace.
If you want to experience the island like a local, the first thing you need to do is leave your hotel and find a neighborhood bar where you can breakfast just as we do.
The Ibizan coffee: a world of its own
Coffee is the cornerstone of an Ibizan breakfast. Here we order "un tallat" (a cortado), "un café amb llet" (coffee with milk) or "un sol" (black coffee). Coffee quality has improved enormously in recent years, with specialty cafes existing alongside classic bars.
In the most traditional bars, coffee is served in thick white earthenware cups, the kind that burn your fingers but keep the heat until the last sip. It's almost always accompanied by a glass of fresh water.
If you order a cortado in an Ibizan village bar, don't be surprised if they serve it with a little condensed milk at the bottom: it's the Ibizan version of the Valencian cortado, and it's delicious. Try it at least once.
The ensaimada: queen of breakfast
The ensaimada is the undisputed star of an Ibizan breakfast. Although the Majorcan ensaimada is more famous, the Ibizan version has its own personality: it tends to be smaller, crispier on the outside and softer on the inside, and is generously dusted with powdered sugar.
The classic plain ensaimada, dunked in café amb llet, is one of the simplest and most comforting pleasures that exists. Ibizan bakeries prepare them in the early morning hours so they're freshly made first thing.

Toast with sobrasada and honey: the hearty breakfast
If you need energy for a long day, nothing beats a slice of pan payés with Ibizan sobrasada and a drizzle of island honey. It's the perfect combination of savory and sweet, and the flavor is absolutely addictive.
Ibizan sobrasada, milder and less spicy than its Majorcan counterpart, melts onto the warm bread and mingles with the honey creating something I can only describe as perfection.
The Ibizan pan payés is another fundamental element. It's a rustic bread, with a thick crust and compact crumb, made with wheat flour, sourdough starter, salt and water. Cut into thick slices and toasted until crispy on the outside but soft inside, it's a delicacy in itself.
Pa amb oli: supreme simplicity
The pa amb oli (bread with oil) is the most minimalist breakfast and perhaps the most quintessentially Ibizan of all. Toasted pan payés, rubbed with a ripe tomato cut in half and drizzled with extra virgin olive oil and a pinch of salt. That's it, that's perfect.
It's the breakfast of farmworkers, what the peasants carried in their bags to eat mid-morning, and it remains the favorite of many Ibizans. Sometimes it's topped with ham, cheese or cured meat, but in its purest form it's simply bread, tomato, oil and salt.
